Nishio is known to produced the best organic Matcha in the world because of its natural fertile soil and ideal weather. This natural condition is very important for Organic Matcha because there is very limited fertilizer can be used in growing organic tea plant. Tea plant grown without good fertilizer has difficulties produce high L-Theanine (umami). Therefore Organic Matcha from Nishio has much better umami and aroma compare to organic Matcha from other region.
Organic Matcha in general has lighter color as compared to conventional Matcha due to the limited choice of weak fertilizer. Comparing with conventional Matcha at same price, you will find that the colour of conventional Matcha is better than organic Matcha, but this doesn't mean the organic Matcha is lower grade, this is the natural characteristic of organic Matcha.
Genki Organic Matcha is certified organic by JAS Japan, it's produced from first flush spring tea leaves which contain high level of L-theanine (sweetness). This matcha is suitable for usucha (thin tea).
