Organic Matcha is grown following very strict standards from JAS and USDA, only limited fertiliser can be used. Therefore the aroma and the flavor of the Matcha depend mostly on the natural nutrients in the soil, the weather, elevation and many other conditions. (Please note that the taste and aroma may vary slightly across different batches. Because of strict rules of organic certification, the tea quality for organic matcha is directly related to the weather condition during growing season).
During harvest season, the youngest tea leaves is handpicked by expert to produce this Matcha. Only tea leaves from first flush are used for this Matcha. Tenyu Premium Organic Matcha has very good aroma and taste which make it can be used for Koicha (thick tea). Only very limited stock available for this Matcha.
