Gyokuro is the highest grade of green tea in Japanese green teas. About 20 days before harvest, tea leaves are covered with clothes to avoid direct sunlight. This process reduce the astringency and increase the umami sweetness. This process is same as Matcha tea leaves. Therefore Matcha and Gyokuro has very good aroma, sweetness and low bitterness.
